Pork Tenderloin Roast

 

1 @ 4-5 pound pork tenderloin

12 small red potatoes (leave whole with skin on)

6 medium white onions (2 cut in half, 3 cut in thick slices, 1 chopped)

1-pound small carrots

½ pound sliced mushrooms

2-3 large cloves garlic (chopped)

Extra virgin olive oil

Oregano

Cilantro

Sage

Basil

Fresh ground pepper

Salt

 

On the top of the stove, heat a small amount of olive oil in a medium to large baking pan.  In the heated olive oil sear (brown) all sides of the pork tenderloin.  Turn off the burner and preheat the oven to 350 degrees.  Season the top of the tenderloin with the herbs then add the potatoes, onions, carrots, garlic and mushrooms.  Season everything with fresh ground pepper and salt.  Cover and seal the pan with foil and place it in the preheated oven.  Bake until done; use a meat thermometer to check after about 1-¾ hours.

 

Serves 6-8 people.
