Spuds ‘n’ Chops
This easy one pan meal will serve 2 people. Just do the math to increase servings.
4 thin sliced boneless pork chops (or breakfast chops)
3-4 small fresh new red potatoes (about the size of a tennis ball)
1 medium red onion
1 medium white onion
1 tablespoon fresh chopped garlic
Fresh ground black pepper
Extra Virgin Olive Oil
Wash and slice the potatoes leaving the peal on. Peal and slice the onions and separate into rings. Rinse off and pat dry the pork chops. Season the pork chops on both sides with paprika, pepper and salt.
In a large frying pan heat the olive oil. Add the garlic, onions and potatoes. Sauté until the potatoes begin to soften then add the pork chops. Cook until the pork chops and done, turning often. When pork chops are cooked and potatoes are fork tender remove from heat and serve.
Optional: for an added spicy taste add Tabasco Sauce while cooking.
