Cross Cultural Stir Fry


1/2 pound sweet Italian sausage
 8 ounces fresh mushrooms, sliced 
 4-6 fresh green onions, chopped 
 1 clove fresh garlic, chopped 
 1 medium bell pepper, chopped
 8 ounces fresh snow peas, cut of ends then cut in half 
 2 cups spiral (twist) pasta
 1 10oz. can Rotel diced tomatoes with green chilies
 1 medium egg
 olive oil
 black pepper
 In a microwaveable bowl add 1 1/2 cups water, a dash of salt and the pasta.  Cover with plastic wrap and microwave on high for about 4-5 minutes.  The pasta should be flexible but firm.  Drain and set aside.

 Add about 2 tablespoons of olive oil to a wok or wok style large skillet.  Turn heat to medium.  Crumble the sausage into the pan.  Cook until brown then add the egg and stir until the egg is cooked. Next add garlic, onions, bell pepper, snow peas and mushrooms.  Then add the drained partially cooked pasta. Add the whole can of diced tomatoes stir well and season with a small amount of coriander, salt and pepper.  Continue to cook on medium low heat for about 15-20 minutes or until most of the liquid has cooked away.
 Serves about 4 people.
